Cheese from Ti Joaquina

Cheese made from sheep's milk from the Fundão region - Serra da Gardunha. Made using ancient methods. Each cheese takes about 6 liters of milk to make. Soft but intense and quite active. Good with meat dishes and good red wines. Probably the best cheese in Portugal.
